Domaine Patrick Hudelot - Gevrey-Chambertin - La Justice 2008

VINIFICATION

Grapes are sorted and totally destemed. Gevrey Chambertin La Justice wine is naturally fermented in tank during two to three weeks with daily punch down and some pump overs to help fermentation. To keep all the fruitiness of this wine, it is aged for 12 months in tank before bottling.

SOIL
The grapes come from a plot located to the east of the village of Gevrey-Chambertin, on thin, stony and sandy soils. The average age of the vines is between 30 and 45 years.

TASTING NOTES
The gritty soil texture of "Justice" gives fruitiness and elegance to this wine that will marry with spicy dishes and strong cheeses from cow's milk.
