VINIFICATION
The winemaking process is traditional: the grapes are de-stemmed, crushed, cold-macerated for a few days then trodden down on a daily basis. The process of fermentation is carried out naturally at low temperatures. After a period of 2 weeks in vats, the wines are brought to the cellar and aged 12 months. Harvested by hand, ageing in oak barrels, 15% new. No finning, unfiltered wine. 100% destemmed.
TASTING NOTES
The Vieilles Vignes is a blend from 3 different parcels with between 30 to 60-year-old vines. Deep in colour, it has a crisp bouquet with raspberry, touches of mandarin infused with a touch of stemmy character. A weight and width of appealing fruit. Bigger in mouth, less initially textured, there is more dimension of flavour here, then the structure comes through. The palate has a sense of compactness on the entry. There is a good structure here a slitghtly foursquare take on Savigny with plenty of freshness and a linear finish. This is very fine and classic in style.
